How do I set up POP3 and SMTP on a server without Exchange?

I have a test Win2k server -- how do I set up POP3 and SMTP on the server without Exchange? The server will only be used internally and will not have any connection to the Internet.
Windows 2000 doesn't include a POP server, though it does have an SMTP server. So, you'll either have to upgrade to Windows Server 2003, or install a third-party POP server. I haven't inventoried the different options available, but there are a lot. A good place to start is to look for free software at www.sourceforge.net. Try searching for "pop smtp server".
