What is an application server?

As we only run three workstations, I've set up Windows 2003 Server purely as a DHCP file server. I know it's a dumb question, but how does an 'Application Server' function, and would it be of benefit?
"Application Server" is Microsoft's latest name for Web servers. Naturally, you should only add that role if you need a Web server.
