This is a very commonly-asked question with Exchange, and the usual way to do it is with Message Journaling. Another possibility is IMS message archival, but journaling is better supported and probably closer to what you need. In the long run, you might be better off with a third-party product that is specifically designed to do mail archiving (especially if you're trying to sort or make sense of the results), such as GFI Mail Archiver.
