Copying email history and contacts onto a PC from an Exchange server

Take a look at the best way to move contacts from your Exchange server onto a single PC.

What is the best way to copy my email history and contacts off my Exchange server and onto my PC? I'd like to know because my computer is leaving my Exchange environment.
If this is for a single PC, I'd recommend creating a .pst file in Outlook, then copying all contacts and email messages into the .pst. Next, save the .pst file onto a thumb drive or eternal hard drive.
