Make sure you install the latest service packs and hotfixes for both the Windows operating system and for Exchange server when you do install.
I also strongly recommend you use Exchange Server 2003 in conjunction with Outlook 2003 clients on the desktops in your environment, as you'll be able to take advantage of something called Outlook Cached Mode, which will minimize client-server traffic and facilitate running a highly centralized Exchange infrastructure.
