How do I administer a computer from a remote location using dial-up?
In most cases you use Terminal Services. TS can be installed for remote administration that allows you to dial into your servers and control them remotely. Or you can use a third-party remote control software such as PCAnywhere. The third-party software option requires significantly less system resources, but you must pay close attention to security restrictions to prevent hijacking.

Editor's Note: For more information on Terminal Services, check out the searchWin2000 Featured Topic Taming Terminal Services.
