How long should we expect an in-place upgrade to take on a system with approximately 7 GB over four mail stores?
Thirty minutes to an hour. The upgrade really shouldn't take all night. You want to include the upgrade in a scheduled maintenance window, just to ensure you set proper expectations for your customers. Maybe schedule it on Sunday between 2 a.m. and 3 a.m. if you are in a critical work environment based in the United States.
If it takes more than an hour, I would suggest something varies on hardware or overall performance of the disk subsystem. In other words, your mileage may vary.
